Last week I was looking for an easy dinner recipe for my family after a busy day. I found this recipe for Lemon Pepper Pork and Veggies Sheet Pan Dinner, and swapped out the pork for chicken thighs (actually I saw it on Instagram first and was inspired).

So here's my version of the recipe:
Ingredients
About 2kg of chicken thighs
1.5kg frozen mixed veggies
1/2 cup olive oil
2 tblspn minced garlic
2 sliced lemons
Sprinkles of Roast Vegetable Seasoning
Instructions
1. Place about 1kg of chicken thighs on each baking tray
2. Toss frozen veggies in olive oil and garlic and fill in the rest of the baking trays with veggies around the chicken
3. Sprinkle Roast Vegetable Seasoning over chicken and veggies
4. Bake at 200C for 30 minutes
